Pasta with broccoli and Norcia sausage is a very tasty first course, the combination of flavors is nothing short of winning. This recipe combines the sweet taste of broccoli with the intense flavor of Norcia sausage aromas. This dish is usually prepared by adding pork sausage to the broccoli, but I assure you it is totally different. The pasta shape I used is penne rigate, but you can use whichever you prefer. The pasta is cooked in the same water used to cook the broccoli to flavor it even more, the same procedure we use in Bari for cooking pasta and turnip tops or with cauliflower. Ingredients
- 1 broccoli
- 14 oz pasta
- 5 oz Norcia sausage
- onion
- olive oil
- chili pepper
- salt in broccoli cooking water
Steps
Clean and cut the broccoli into pieces. In a pot, bring water with salt to a boil, once it starts boiling, immerse the broccoli and cook for 5 minutes, then add the pasta and continue cooking according to the time indicated for the chosen pasta type.
Remove the casing from the Norcia sausage and crumble it. In a pan, sauté olive oil and onion on low heat for a few minutes, then add the sausage and cook for about 5 minutes.
When the pasta is cooked, drain it, reserving some cooking water, and add the pasta to the pan with the sausage.
Add a ladle of cooking water and mix well, adding chili pepper if desired.
Pasta with Broccoli and Norcia Sausage is ready! Enjoy your meal!
