I can’t really call it a recipe, or maybe I can, I’m not sure. Violet Sugar. Why? Because I love purple, it’s definitely my favorite color. Is it violet-scented? A bit, you need to find fragrant ones, otherwise, it will smell like herbal tea. But I wasn’t interested in the scent, just the color. Imagine the beauty of bringing purple sugar to the table! Obviously, try to pick the violets in a field away from busy roads or heavily frequented places. For the rest, the almost recipe is done in 5 minutes. If you’re looking for more complex desserts, try the cloud ring cake Nene, the cream mille-feuille, the pistachio pastry cream or the egg whites and chocolate chips brioche.

Steps to Prepare Violet Sugar

  • Pick the violets in a place away from traffic. Soak them in cold water (you can also add baking soda if you want), then drain and gently dry them. Remove the petals and gather them in a food processor.

  • Add the sugar to the violets. Blend everything until you get a kind of purple icing sugar. Pour the mixture onto a kitchen paper.

  • Let the sugar dry (I left it in the sun for a couple of hours) for 4-5 hours and pass it through a strainer. The purple sugar is ready!

Storage

You can store it in a closed glass jar.
