Spiced Chicken Fillets and Mustard Kefir Sauce

The spiced chicken fillets I’m sharing with you today are a recipe… let’s say a commemorative one. 😊

Yes, because I cooked them to remember, with a bit of nostalgia, a pub that closed almost a year ago, much to the dismay not just of us but of all who used to frequent it.

It was our favorite spot: close to home, open in the afternoon, full of good music, run by guys who had become more like friends than staff, offering a classic pub menu of super quality, with giant burgers and wedges that remain unmatched. Plus, it also had great dishes from both Romagna and South American cuisines: excellent first courses and meat, the legendary baked empanadas, so good!, and the ginger chicken skewers with a tzatziki-like sauce that we loved a lot. And we are truly nostalgic for all of it.

And so, after saying many times “I wish I could eat the Bagus skewers again!”, I finally bought some chicken fillets, tried cooking them with ginger and curry, and served them with a kefir sauce.

Yes, a sauce completely different from the original but proved worthy of these spiced chicken fillets, which we really enjoyed, so much so that everyone here has already asked for a repeat! 😊
And even if my recipe isn’t exactly like their skewers, I truly hope it’s a good omen, who knows, for a future reopening of the place! 🤞

Ingredients

  • 14 oz chicken breast fillets
  • 1 lemon
  • 1 tsp curry
  • fresh ginger (a piece about 1 inch)
  • 1 tsp extra virgin olive oil
  • 5 oz homemade kefir (or sour cream)
  • 1 tsp mustard
  • 1 tsp extra virgin olive oil
  • 1 clove garlic (small, or half clove)

Steps

  • Grate the ginger and squeeze the lemon.

    Season the chicken fillets with lemon juice, grated ginger, curry, and olive oil and let them marinate for at least a couple of hours in the fridge in a bowl covered with plastic wrap.

    During the marination time, turn the fillets once or twice.

  • Prepare the accompanying sauce:
    Finely chop the garlic clove (remove the sprout).
    Pour the kefir (or sour cream if kefir is unavailable) into a small bowl, add the chopped garlic, the grated zest of half a lemon, mustard, and olive oil, and mix well with a teaspoon.
    Cover with plastic wrap or use a container with a lid and let it rest in the fridge until serving the chicken fillets.

  • After the marination time, cook the chicken fillets on the grill pan or in a non-stick skillet.

  • Halfway through cooking, turn the fillets and moisten them with the marinade (it won’t be abundant but enough to moisten them all).
    To make them even spicier, you can add some freshly grated ginger to the fillets before serving.

  • Serve your spiced chicken fillets with curry and ginger well-cooked and hot, drizzling them with the mustard kefir sauce.

Salt-Free Tips

Salt-Free Even though salt-free cooking doesn’t exist in pubs (😌) (and it was the same for our favorite pub), I suggest trying my salt-free tips with this recipe: using curry and ginger makes the chicken very flavorful, and the kefir sauce thanks to garlic and mustard is perfect as it is without added salt. This recipe is just right to start reducing salt in your dishes. 😉

If you are interested in reducing or eliminating salt, always remember to:
▭ Decrease salt gradually, as your palate needs time to adjust and shouldn’t notice the progressive reduction.
▭ Use spices. Chili, pepper, curry, nutmeg, cinnamon, cloves, cumin…
▭ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▭ Use seeds. Sesame, pine nuts, almonds, walnuts…
▭ Use spicy vegetables or fruit. Garlic, onion, lemon, orange…
▭ Use strong-tasting dressings like vinegar, wine, or balsamic.
▭ Use my salt-free vegetable granules and gomasio.
▭ Prefer fresh foods.
▭ Avoid cooking in water, prefer methods that retain flavors (grill, parchment, steam, microwave)
▭ Avoid bringing the salt shaker to the table!
▭ Allow yourself an occasional exception. It’s good for your mood and helps to persevere.

If you cannot or do not want to give up salt:
▭ You can still try my recipes by salting according to your habits.
