Light Curry Broccoli

Today I’m sharing the recipe for light curry broccoli, a fantastic recipe that’s been part of my daily life for a long time. I often prepare them this way because they are quick to make, and the use of curry ensures that the smell of broccoli is almost unnoticeable at home! I usually make broccoli curry in large quantities, portion them according to my diet measurements, and store them in the fridge for 2/3 days in airtight containers, so I always have a ready side dish!

Ingredients for light curry broccoli

  • 28 oz broccoli (green, already cleaned)
  • 2 tablespoons curry (powdered)
  • 8 cups water
  • 1 pinch coarse salt
  • 2 tablespoons extra virgin olive oil
  • to taste fine salt
  • to taste mixed peppercorns (freshly ground)

Preparation of light curry broccoli

  • Clean the broccoli from the waste parts, separate them into individual florets, wash them well, and let them drain.

  • Place the broccoli florets in a pot and cover with plenty of slightly salted water, add the curry powder and stir with a wooden spoon, set over high heat and once it boils, cook for 30/35 minutes.

  • Once the broccoli is cooked (you can test this by piercing them with a fork; if it goes in easily, they are ready), drain them well and place them in a bowl, season with a pinch of salt (taste to salt to your liking), the olive oil, and freshly ground pepper, mix gently and serve!

Anti-waste Tip

You can drain the cooking water into an empty pot and then use it as broth for a tasty soup!

Variations

If you want to make the curry broccoli even tastier, you can replace the plain oil with garlic oil or chili oil. If you like, you can also add some anchovies in oil, but in this case, it will be a bit less light!

  • Can I also use white broccoli?

    Yes, you can also use white broccoli, although I prefer the green one in this case because it is slightly more flavorful.
