Ingredients for the soft cake

I used type 1 flour. If you use another type of flour, remember that the absorption changes. Your batter should be creamy. If necessary, adjust the amount by adding or removing 10-20 grams of flour from the recommended dose until you achieve a creamy consistency.

  • 1 3/4 cups flour (I used type 1 flour)
  • 1/3 cup g brown sugar (or granulated)
  • 3 eggs
  • 1 tbsp g baking powder
  • 1/3 cup g orange juice
  • 1/3 cup g sunflower seed oil

Steps with photos of the soft orange cake

  • With the help of a hand whisk, beat the eggs with the sugar. Gradually add the oil and, immediately after, the orange juice, mixing well to incorporate them.

    Finally, add the flour and the baking powder, sifted. Quickly mix all the ingredients until the batter is smooth and creamy.

    Pour the obtained mixture into a mold with a diameter of 8.5-9.5 inches, previously greased and floured.

    Bake at 356 degrees in a preheated static oven for 30-35 minutes. After 30 minutes, do the toothpick test: if it comes out dry, the cake is ready.

  • Once cooked, let it cool completely inside the mold. Before serving, if you like, sprinkle with some powdered sugar.

Storage.

Store the cake, once completely cooled, under a glass dome or in an airtight container.

It stays perfectly soft and fragrant for 3-4 days at room temperature. There’s no need to refrigerate it; in fact, the cold might slightly alter its texture.

If after a few days it seems slightly less soft, warm it for a few seconds in the microwave or oven, and it will come back as freshly baked!
