Ingredients for Anise Cookies
I chose Type 1 Flour, but this recipe works with any flour you have in your pantry. Just remember that each flour absorbs differently.
Don’t hesitate to integrate with a little flour or a few drops of liquid if the dough doesn’t reach the right softness and manageability.
- 2 1/4 cups type 1 flour
- 2/3 cup granulated sugar (+ extra for the surface)
- 1 egg (at room temperature)
- 1/4 cup extra virgin olive oil
- 3 1/2 tbsp milk (Warm)
- 2 tbsp sambuca
- 1 tsp baking powder

- 1 Baking Tray
Steps
In a large bowl, mix and well combine the dry ingredients: the flour, the baking powder, and the granulated sugar.
Now add: the egg, the oil, the milk, and the Sambuca.
Mix vigorously until all ingredients are incorporated.Briefly knead the dough with your hands until you obtain a soft dough that is not sticky. If it sticks, add a little flour at a time.
Place the dough on a baking tray lined with parchment paper.
Shape it into a loaf about 10 inches long and 6 inches wide.Moisten your hands with water and gently pass them over the surface of the loaf to wet it slightly.
Generously sprinkle the loaf with granulated sugar.
Bake in a preheated oven at 350°F for 25-30 minutes, or until it reaches a nice golden color.
After the time has passed, remove the loaf from the oven and let it cool for just 5 minutes.
When it’s still warm, cut it into slices to obtain cookies, about 3/4 inch thick.Rebake the cookies arranged on the tray and bake them again for about 3 minutes on each side. This final step is crucial to achieve perfect crunchiness.
