Stewed Meatballs without Eggs

I share with you these incredibly soft stewed meatballs. A very easy and tasty recipe, the meatballs melt in your mouth. They are made without eggs, thanks to sandwich bread soaked in milk acting as a binder, making these meatballs super soft.

Ingredients

  • 0.66 lbs ground turkey
  • 5 slices sandwich bread (I use gluten-free)
  • 0.5 cups milk (I use lactose-free)
  • 2.47 oz breadcrumbs (I use gluten-free)
  • 1.76 oz grated cheese (I use pecorino)
  • to taste salt
  • to taste parsley
  • 3 tbsp tomato sauce
  • 3 carrots
  • 3 potatoes
  • 2 stalks celery

Steps

  • First, soak the slices of bread in the milk and mix until fully absorbed.

    In a bowl, pour all the ingredients and work with your hands until well combined.

    Form the meatballs and set aside.

  • In a pot, add the carrots and celery with water and bring to a boil.

    Meanwhile, cut the potatoes into small cubes. When the pot with the vegetables is about to boil, add salt and gently add the potatoes and meatballs.

    Add 3 tablespoons of tomato sauce and cook covered on low flame for 30-35 minutes.
