Coffee and Peanut Butter Donuts

These coffee and peanut butter donuts are simply amazing, they stay soft for days, are outrageously good, and once you’ve tried them, you won’t let them go, I assure you! They are great to serve for breakfast, a snack, or dessert, and if you want to make them even more delicious once they are cooked and cold, you’ll find many ideas at the end of the recipe! Ingredients for Coffee and Peanut Butter Donuts

  • 1 1/2 cups all-purpose flour
  • 7 tbsp water
  • 3 1/2 tbsp granulated sugar (or alternatively 1 tbsp of stevia)
  • 3 tbsp butter (melted and cooled)
  • 1/2 cup peanut butter (3 heaping tablespoons)
  • 1 egg (XL size)
  • 1 espresso coffee
  • 1 tsp baking powder

Let’s Make Coffee and Peanut Butter Donuts Together!

  • Start by melting the butter and making the coffee, then let them cool. In a bowl, pour the egg, sugar, and water and mix well with a spoon.

  • Now add the melted (cooled) butter, coffee, and peanut butter, mix well with a spoon (or electric beaters if preferred) until you have a homogeneous mixture.

  • Now add the flour and baking powder to the “liquid” mixture and mix from bottom to top until you get a well-thick and lump-free mixture. If you have trouble with the spoon, feel free to use electric beaters (or a stand mixer), then set the mixture aside for a moment.

  • Take the donut pan and grease it with a silicone brush and the little butter left in the pot after melting it, DO NOT flour, please!

  • With a kitchen spoon, pour the mixture into the molds, about 2 spoonfuls of mixture in each mold; continue until finished, then level the surface of the donuts with the tip of the spoon, lightly tap the mold on the table to remove any remaining air.

  • Preheat the oven to 392°F (200°C) and when it’s hot, bake and cook for 20 minutes (always do the toothpick test because ovens are not all the same!). Once baked, remove the donuts and let them cool completely before removing them from the mold! Enjoy your meal!

Tips

You can make the coffee and peanut butter donuts even more delicious by adding once cold:

Powdered sugar or melted chocolate or coffee glaze or drizzled peanut butter, you can also garnish with coffee powder!
