Ingredients

I used all-purpose flour, but you can use whichever flour you prefer; just remember that changing the flour will also change the absorption rate. Depending on the flour you decide to use, you may need to add more flour or a few tablespoons of water. This dough should be very soft and not sticky.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Ricotta
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 3 tablespoons chocolate chips

Steps

  • In a bowl, mix sugar with ricotta, then add oil.

Also incorporate the flour and pre-sifted baking powder.

Once the ingredients are all combined, add the chocolate chips, mix well, and create a dough.

Take small pieces of dough and with the help of the palm of your hands create balls and slightly flatten them. If you want to make little doughnuts, make a ball and make a hole in the center with your finger and shape gently.

  • Bake at 340°F in a preheated static oven for 13/15 minutes in the center of the oven. After 13 minutes, check if they are golden on the surface and at the base; the cookies are ready.

The eggless ricotta cookies are ready to be enjoyed. See you in the next recipe.
