Today I prepared a very quick main course, tasty sardines in the pan. Usually, I prepare sardines roasted because they are very tasty, but following the fishmonger’s advice, today I made them in the pan. They cooked really quickly, just a couple of turns in the pan and they were ready. Sardines can be a bit tedious because of the many bones, but believe me, their flavorful flesh will reward your patience in removing them. You might also be interested in;

Ingredients
- 12 sardines
- to taste olive oil
- 1 sun-dried tomato
- to taste chopped garlic and parsley

Steps
In a pan, sauté the chopped garlic and parsley with the sun-dried tomato cut into pieces for a few minutes.
Wash the sardines well, add them to the mixture, and cook about 5 minutes per side.
Serve hot.
