Fig and Ricotta Dessert, a spoon dessert that’s prepared in minutes, but wins at the first taste.
The base is a cow’s milk ricotta cream, made even more fragrant with a touch of honey and lemon juice, and topped with chopped pistachios for a crunchy note. However, the true stars are the figs: I caramelize them in an air fryer with butter, honey, and lemon to enhance their natural sweetness without weighing them down. Alternatively, you can also bake them if you prefer.
This fig and ricotta dessert is perfect to end a summer dinner or for a special snack. It’s egg-free, gluten-free, and can be prepared in advance and served in practical single-serving cups. A simple yet impressive idea that best highlights one of the symbolic fruits of the end of summer.

FAQ (Questions and Answers)
Can I use sheep’s milk ricotta instead of cow’s milk ricotta?
Yes, if you prefer a more intense flavor, you can substitute cow’s milk ricotta with sheep’s milk ricotta. I recommend choosing one that’s well-drained and creamy to maintain the dessert’s soft consistency.
Can I use dried figs instead of fresh ones?
This recipe is designed to highlight fresh figs, but if they’re out of season, you can use dried figs by briefly rehydrating them in warm water and honey. The result will be different but still delicious.
Can the dessert be prepared in advance?
Yes, you can prepare both the ricotta cream and caramelized figs a few hours in advance. I recommend assembling the dessert shortly before serving it to maintain the ideal consistency.
