Fluffy Pancakes

Today I am sharing the recipe for these super fluffy pancakes. They are made quickly with just a few ingredients. Delicious fritters similar to crêpes but thicker and fluffier, with a spongy texture and savory taste, they can be filled in many ways: with honey, spreads, fruits, etc. Come with me, let’s start cooking.

Ingredients for fluffy pancakes

  • 1 cup milk
  • 1.75 cups all-purpose flour (or cake flour)
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 egg

Steps for fluffy pancakes

  • Mix the egg with the sugar and beat with a fork or a hand whisk. Add the milk at room temperature and continue to mix.
    Gradually add the sifted flour and baking powder, continue to mix to avoid forming lumps: you should get a smooth and homogeneous batter.

    Heat a non-stick pan (or grease it) and, when hot, pour a ladle of batter. Cook for about 3 minutes until bubbles form on the top, flip the pancake and cook on the other side for another 3 minutes.
    The super fluffy pancakes are ready to be enjoyed.

Storage

It’s best to eat the pancakes right away; if there are leftovers, cover them with plastic wrap and store in the fridge. You can then slightly warm them in a pan or in the microwave for a few seconds before eating, so they will be fluffy as freshly made.
