Fried doughnuts are a real indulgence to enjoy every now and then. They are very delicious and very simple to make, just follow the rising times to achieve a good result. Fried doughnuts are super soft and uniquely delicious. They are also great the day after.

Ingredients
With these quantities, I made six large doughnuts and 8 small dough balls
- 2 cups all-purpose flour
- 2 cups Manitoba
- 1/3 cup vegetable oil
- 3/4 cup milk
- 2 eggs
- 1/4 cup granulated sugar
- 2 tsp dry yeast
- 1 orange (Grated zest)
Steps
I used the stand mixer for kneading, but you can knead by hand if you prefer.
Add milk, eggs, oil, sugar to the bowl and mix.
In another bowl, mix flours with yeast and a generous tablespoon of sugar.
Start to add dry ingredients to the wet ones, mix well.
Pour the mixture onto a floured board and work the dough well, add more flour if necessary; the dough will be compact and soft.
Place inside a bowl and let rise for at least 3 hours (I usually knead in the morning and then continue in the afternoon)
After the rising time, take the dough and place it on a floured surface, fold from the outside toward the inside on all four sides and roll out the dough with a rolling pin.
With the help of a glass, a cutter or a small bowl, cut out circles to form doughnuts; to create the hole in the center, I used a floured bottle cap.
Place the doughnuts on cut pieces of parchment paper to easily transfer them into the pan with hot oil. With the remaining dough, as seen, I made small dough balls.
Let rise covered with plastic wrap for about 40 minutes.
Put the oil in a high-sided pan and heat it. To check when the oil is hot enough, insert a toothpick; when it sizzles around it, the oil is ready.
Fry the doughnuts and dough balls until golden brown, turning them often during cooking; it will take about 3/4 minutes.
Drain on paper towel and immediately roll them in granulated sugar.
Storage and Tips.
It’s important to work the dough thoroughly before rising.
Roll the doughnuts in sugar while they are still warm, so the sugar granules stick better.
Store the doughnuts in an airtight container.
