It’s always a good time for a nice omelette. Today I decided to enrich a simple omelette with some fresh green beans I had left over. A very tasty and nutritious omelette. I must say that this omelette pleases everyone, especially my husband who, despite not being crazy about vegetables, really approved this green bean omelette. It can be prepared in no time, ideal for those busy days, a great lunch or dinner saver.
Curiosity: Green beans also contain various B group vitamins. Then there are minerals, primarily potassium, a fundamental mineral that, among other things, reduces water retention. And then calcium, which is very present here for a plant source, iron, magnesium, manganese, and phosphorus.

Ingredients
For this recipe, you can use either fresh or frozen green beans. The cooking time in both cases will be about 10 minutes.
- 9 oz green beans
- 4 eggs
- 1 tbsp pecorino romano (Not necessary)
- to taste salt

Steps
Blanch the green beans in slightly salted boiling water for about 10 minutes.
Meanwhile, in a bowl, beat the four eggs with the tablespoon of pecorino and a pinch of salt.
Once cooked, drain the green beans well and add them to the previously beaten eggs in the bowl.
Take a non-stick frying pan and pour a little oil into it, heat for a minute and pour the mixture into it. Cover with a lid and cook for 2-3 minutes, after three minutes, using a plate, flip the omelette and cook for the same amount of time.
