Summer Salad with Mackerel

The summer salad with mackerel is a fresh salad made with ingredients that don’t require cooking 🙂

September has now arrived, and slowly the summer will come to an end.

However, these days the heat still lingers, so I decided to prepare a cold dish once more.

So before autumn arrives, let’s enjoy this fresh salad 😉

I used mackerel, the kind you find in cans, but you can also use salmon if you prefer.

You can use either the one with olive oil or in brine. I used the one in brine.

If you use the one with olive oil, it won’t be necessary to add any oil.

It’s simple and very quick to prepare. Perfect for when you have little time or are in a hurry.

If you like, you can prepare it at any time of the year.

It can be served as a side dish, but with generous portions, it can become a main course.

Ingredients for Summer Salad with Mackerel

  • 10.6 oz cherry tomatoes
  • 5.3 oz pitted olives
  • 7 oz mozzarella balls
  • 7 oz sweet corn, canned, drained
  • 1 tbsp extra virgin olive oil
  • to taste salt

Steps for Summer Salad with Mackerel

  • In a large bowl, add the shredded mackerel, chopped cherry tomatoes, pitted olives, mozzarella balls, and corn. Stir with a spoon and season with olive oil and salt.

    The summer salad with mackerel is ready to be served on individual plates.
