Coffee Shortcrust Pastry

The Coffee Shortcrust Pastry is a delightful, fragrant, and perfectly crumbly basic recipe, ideal for cookies and tarts.
It’s a shortcrust pastry with a strong coffee aroma and flavor that will win everyone over at the first bite. To further scent the dough, we can add vanilla extract or a packet of vanillin.

Ingredients For the Coffee Shortcrust Pastry

  • 2 3/4 cups all-purpose flour
  • 6 tbsp vegetable oil
  • 2 eggs
  • 1/3 cup whole cane brown sugar (or granulated sugar)
  • 2 tsp baking powder
  • 3 tbsp strong brewed coffee

Steps for the Coffee Shortcrust Pastry

  • In a bowl, beat the eggs with the sugar.
    Add the oil and the coffee. Mix well.
    Begin to add the sifted flour and the baking powder little by little.
    Work the dough until you have a homogeneous ball; if necessary add more flour.

  • The coffee shortcrust pastry is now ready to be rolled out. Decide whether to make little cookies or a tart of approximately 9.5–10.25 inches in diameter.

    Bake in a preheated static oven at 356°F.
    For an unfilled tart: Bake for about 25 minutes. (Baking time with a filling will depend on the filling used).
    Cookies: Bake for about 13–15 minutes, depending on thickness.
