Ingredients for Melt-in-Your-Mouth Stuffed Veal Bundles
- 15 oz veal eye round (10 slices)
- 6 oz cooked ham (thinly sliced)
- 4 oz emmenthal cheese (thinly sliced)
- 1/3 cup breadcrumbs
- 1 teaspoon aromatic pink salt (I used the green one)
- as needed extra virgin olive oil
Preparation of Stuffed Veal Bundles
Arrange the veal slices individually on the work surface (you can use the paper they were wrapped in or a sheet of parchment paper), place a piece of cooked ham and a piece of cheese in the center of each slice until you’ve used all the ingredients.
Close the bundles by rolling them and then folding the ends underneath, press them slightly and they won’t open, you won’t need toothpicks or kitchen twine to close them!
In a bowl, mix the breadcrumbs with the aromatic salt, pass the bundles through this mixture, taking care to coat them on every side, and place them in a non-stick baking dish.
Heat the oven to 480°F and when it’s hot, drizzle a little oil on top, then bake and cook for 15/20 minutes, always checking the cooking as each oven is different and times may vary. At the end of cooking, there should be a nice jus left in the baking dish to pour over the bundles before serving. Once cooked, serve them piping hot with some fresh parsley on top if desired!

NOTES
The recipe specifies 1 teaspoon of salt because it is aromatic pink salt (pink salt is already less salty and also contains aromatic herbs). However, if you want to use regular salt, make sure to use just a pinch!
