- Cuisine: Italian
- Seasonality: Carnival, All seasons
Ingredients
- 1/2 cup light cream (light)
- 1.8 oz 0% fat Greek yogurt
- 3.4 tbsp milk
- 1.8 oz grated Parmesan
- 2 pinches fine salt
- 2 pinches black pepper (ground)
- 0.14 oz gelatin sheets
- 4 cherry mozzarella balls
- 8 cherry tomatoes (yellow, red, green/red)
- to taste dried oregano
- to taste fine salt
- to taste olive oil
- to taste sage (a few leaves for decoration)
Tools
- 1 Mold silicone mold for shot glasses
Steps
Put the light cream in a saucepan, add the milk, yogurt and heat, stirring occasionally.
Add the grated Parmesan and let it melt completely.
In a bowl with some cold water, soak the gelatin sheets. Squeeze them and add to the cream mixture. Cook until completely dissolved. Then turn off the heat.
Pour the still warm mixture into the molds, let it cool slightly and put them in the freezer for a few hours, preferably overnight.
If you have some mixture left, you can make shapes by placing the molds on parchment paper and letting them solidify in the fridge for a few hours or overnight.
Take the cups from the freezer and carefully remove them from the molds to avoid breaking them. They must be well frozen, or you risk distorting or breaking them.
And here they are, ready to be filled.
To fill these cups, I used multicolored cherry tomatoes. I find them delightful.
Now cut the mozzarella balls and cherry tomatoes in half. Season with oil, oregano, and salt. Fill each Parmesan panna cotta cup with a halved mozzarella ball and cherry tomatoes, using a different color for each cup.
Decorate with a few sage leaves and enjoy! Keep them in the fridge until the cups become soft.
An explosion of color on your table!
