Today I’m sharing with you a cake that’s different from the usual ones. The hallmark of this cake is the dried fruit. I made this dessert with a mix of dried fruits including hazelnuts, pistachios, almonds, and cashews, you use the dried fruit you prefer. An ideal dessert at any time of the day. Dried fruit has many nutritional properties that are good for our health, of course in moderate quantities.
This cake is prepared in a very short time and takes only 25 minutes to bake.

Ingredients
- 1.75 cups flour (I used Spelt Flour)
- 4 eggs
- 8 tbsp butter (Softened or better if melted)
- 0.5 cups granulated sugar
- 7 oz Dried fruit (Roughly chopped)
- Half packet Baking powder (About 8 grams)
Steps
First, chop the dried fruits with a mixer or by hand with a knife; they should not become flour
Separate the yolks from the whites and in the yolk bowl add the sugar, the melted butter, and work the mixture with a fork
at this point Add the dried fruits, the baking powder, and the flour gradually
the dough will be compact to work with hands, it is normal. Beat the egg whites until stiff peaks form, start incorporating them into the dough with a spatula or hands.
Once everything is mixed, pour the mixture into a pan, 9 inches in diameter, greased and floured or lined with baking paper (I used a silicone mold)
Bake in a preheated static oven at 350 degrees Fahrenheit for 25 minutes
