Sicilian Almond Paste Cookies

Ingredients

  • 2 cups almond flour
  • 3/4 cup granulated sugar
  • 3 egg whites
  • Grated zest of one lemon
  • Candied fruit and almonds, for decoration

Steps

  • Let’s start by placing the almond flour, sugar, and grated lemon zest in a bowl, mixing with a fork.

    In another bowl, pour the egg whites with a pinch of salt and beat with an electric mixer.

    Gradually add the beaten egg whites to the dry ingredients and mix well.

    Place the mixture in the fridge for two hours, then after this time, create simple balls and insert a candied cherry in the center.

    Bake at 350 degrees Fahrenheit for up to 12 minutes. Once out of the oven, the cookies will be very soft but will solidify on the outside after a few minutes.
