The potato flatbread is a dish that can be enjoyed as an excellent appetizer or as a main course accompanied by a side of vegetables. It’s really simple to prepare, and you only need a few simple ingredients.

Ingredients
- 1.75 lbs potatoes (peeled)
- 3.2 cups all-purpose flour
- 6.35 oz grated Parmesan cheese
- 2.2 cups water
- 4 pinches fine salt
- 3 tsps dried oregano
- 3 tbsps olive oil (for the dough)
- to taste olive oil (for the flatbread surface)
- to taste black pepper (ground)
Steps
Wash and peel the potatoes. Slice them very thinly with a knife or a mandoline.
In a bowl, combine flour, Parmesan, salt, water, oregano, and mix with a spoon. The batter should not be too thick or too runny.
Add the potato slices to the bowl with the batter, mixing well to fully coat the potatoes.

Cover a baking tray (mine measures 14.57×12.99 inches) with parchment paper and pour the potato mixture over it. Try to level it as best as you can.
Drizzle plenty of oil on the surface and bake at 356°F for about 50 minutes.
Season with some ground pepper and enjoy!
Tips, advice
Alternatively, you can divide the batter into two parts and pour it over two trays, covering it with the sliced potatoes.
If you want a thinner flatbread, you can use two trays instead of one.
