Ingredients
- 1.5 lbs potatoes (already peeled)
- 4.2 oz onion (already cleaned)
- 1.3 lbs zucchini (already cleaned)
- 1 bunch chopped parsley
- 4 eggs
- 4 pinches fine salt
- 4 pinches black pepper (ground)
- 4 tablespoons olive oil
- 4 tablespoons water (released from the zucchini)
- 2 tablespoons grated Parmesan cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder (optional)
- 3 tablespoons breadcrumbs (to sprinkle on the bottom of the baking tray)
- as needed olive oil (to grease the bottom of the baking tray)
- 3 tablespoons grated Parmesan cheese (to sprinkle on the surface)
Steps
Wash and clean the zucchini, grate them with a large-hole grater, and put them in a bowl.
Peel the potatoes and grate them with a large-hole grater, place them in a container. Clean and thinly slice the onion, place it in a container.
At this point, take a rather large container, put the potatoes squeezed from excess water inside. Also add the squeezed zucchini, keeping aside the excess water obtained.
Add the onion, parsley, and mix the ingredients well.
In another bowl, break the eggs, add the salt, ground black pepper, 4 tablespoons of oil, 4 tablespoons of water released from the zucchini, and the Parmesan cheese. Mix well with a whisk.
Pour the flour and the baking powder (optional) into the mixture, and mix well with a whisk.
Now incorporate the egg mixture into the zucchini mixture, trying to distribute it well over all the vegetables.
Butter and sprinkle breadcrumbs on the baking tray (if you prefer, you can cover it with parchment paper), pour the mixture, and try to level it well.
Sprinkle generously with grated Parmesan cheese.
Bake at 356°F for about 45 minutes. You can serve with a yogurt sauce or other sauces of your choice.
