- 2 fillets sea bass (branzino)
- 1.4 oz breadcrumbs (fresh)
- A few leaves parsley
- 2 fillets anchovies in oil
- 1/2 clove garlic
- 6 taggiasca olives (pitted)
- 1/4 tsp fine salt
- 1 1/3 tbsp extra virgin olive oil

Steps
In the food processor, coarsely chop the fresh breadcrumbs with the olives, parsley leaves, anchovy fillets, garlic with the core removed, and add a pinch of salt. Place the sea bass fillets on the tray covered with lightly oiled parchment paper, check that there are no bones in the center of the fillets and remove them with tweezers if necessary. Salt the fillets and place the topping on top without pressing and drizzle with a little oil. Bake in a preheated oven at 350°F and cook for 25 minutes. Serve with a few slices of lemon.

For the topping, it is better to use fresh breadcrumbs and it’s recommended not to press it onto the fillets.
