Ingredients for Crepes with Salmon and Broccoli

  • 1 1/2 cups whole milk
  • 1 1/2 cups all-purpose flour
  • 3 eggs
  • 1 pinch salt
  • 8.8 oz salmon
  • 8.8 oz broccoli
  • 3/4 cup fresh cream
  • 1/2 cup vegetable broth
  • 1 onion (small)
  • 3 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp cornstarch

Preparation of Crepes with Salmon and Broccoli

  • In a bowl, mix the milk and eggs with a whisk. Add the sifted flour and a pinch of salt. Blend well to dissolve all lumps.
    Grease a wide, shallow pan with a bit of butter and pour in a ladleful of batter, swirling it with a wrist movement to form a round crepe approximately 7 inches in diameter. Let it cook for a couple of minutes and flip it. The crepe takes very little time to cook, about 2 minutes per side. Continue until all the batter is used up; you should get about 8 pieces. Keep them warm.

  • Peel and finely chop the onion. Wash and clean the broccoli and cut them into pieces. Heat a tablespoon of extra virgin olive oil and brown the onion.

    Add the broccoli and broth and continue cooking for about two minutes. Pour in the cream, bring to a boil and thicken the mixture with cornstarch.

  • Cut the salmon into cubes and season it with lemon juice and a pinch of salt. Add the salmon to the broccoli sauce and cook on low heat for about 5 minutes. Adjust the salt, then fill the crepes with the broccoli and salmon filling.
