This crunchy salami and cheese came about like this: I open the fridge, see some salami, a piece of cheese, and have no desire to wait for dough rising. The result is a flattened rustic pizza, crispy on the outside and soft on the inside, perfect as a quick dinner, but also as an appetizer or aperitif cut into wedges.

It’s a yeast-free recipe: quick dough, filling with salami and melting cheese, hot oven and go. The homemade crunchy is ideal when you want something tasty but simple, with ingredients you already have, like cured meats, cheeses, and flour. Also great as a quick pizza in a pan or in a ventilated oven.

Ingredients

  • 2 cups flour (the one you usually use)
  • 2 tbsps extra virgin olive oil
  • 3.4 oz water
  • 1 pinch salt (optional)
  • 3.5 oz salami
  • 5.3 oz cheese

Steps

  • Pour the flour on the work surface and make a hole in the center, insert the oil and salt, add some water and mix in the center.

  • Pour some more water and gradually go to the edges to gather all the flour and knead well.

  • Divide the dough into two parts and roll them out, place one half on a baking sheet or on the tray lined with paper.

  • Fill with salami, cut the cheese into slices, I used Gruyère, and add it to the filling.

  • Close with the other sheet, seal the edges a little, oil and cook at 356°F for about 15 minutes.
