Ingredients

  • 8.5 oz kidney beans (2 cans)
  • 2 potatoes
  • 1 zucchini
  • 2 carrots
  • Half onion
  • 1 stalk celery
  • 4.6 oz small pasta
  • 4.2 cups vegetable broth (plenty)
  • 3 tbsps extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

  • First, peel and slice the carrots, then peel and dice the potatoes. Wash and cube the zucchini. Finely chop the onion and celery.

    Place a large saucepan on the heat, pour in the extra virgin olive oil, and gently sauté the onion and celery for a few minutes, stirring.

    Add the carrots, potatoes, and zucchini, stir well and let them flavor for about 5 minutes.
    At this point, add the canned kidney beans, which have been drained and rinsed under running water. Cover with hot vegetable broth, season with salt and add pepper.

    Bring to a boil and cook the minestrone for about 20 minutes until the vegetables are soft.

  • Pour the small pasta directly into the pot, stir, and continue cooking for the time indicated on the package, adding more broth if necessary.

    At the end of cooking, taste and adjust the salt. The minestrone should be creamy and enveloping.
