Steps for preparing lentil crepes

  • First, soak the split lentils in cold water for two hours. After soaking, drain and rinse them under running water, and gather them in a tall container.

  • Add water, a pinch of salt, and blend with the immersion blender until creamy. Brush a pan with extra virgin olive oil. Pour amounts of batter into the pan and swirl to spread the mixture. Cook the crepes on low heat for a few minutes on each side. Continue until the batter is finished, stirring it each time before pouring the new amount.

  • You can fill the crepes with raw ingredients (like mayonnaise, salad, and deli meats) or with a filling suitable for baking the dish afterward.
