Farmer’s Chicken

Farmer’s Chicken is a main course from the rustic Italian tradition, simple yet full of flavor. This recipe originates from humble kitchens, where a few simple and genuine ingredients transform into comforting dishes, perfect for family meals.

My favorite version of Farmer’s Chicken is the white one, but if you love tomatoes, you can add peeled tomatoes or rustic tomato sauce.

Ingredients

  • 2.2 lbs chicken pieces
  • 1 golden onion
  • 1 carrot
  • 1 stalk celery
  • 2 cloves garlic
  • 1 sprig rosemary
  • 1 leaf bay
  • 1/4 cup dry white wine
  • to taste extra virgin olive oil
  • 1 cup vegetable broth
  • to taste salt
  • to taste pepper

Preparation

  • Add the chicken pieces and let them brown slowly until golden on all sides;

    Deglaze with white wine and let it evaporate;

    Adjust salt and pepper;

    Cook slowly for 1 hour, occasionally adding a ladle of broth to prevent it from drying out too much;

    Test with a fork to ensure the meat is tender;

    Reduce the cooking juices by raising the heat for a short while;

    Serve the chicken hot, accompanied by:

    boiled or roasted potatoes;

    polenta;

    slices of toasted homemade bread.

If you have leftover chicken, store it in the refrigerator in a well-sealed container for up to 3 days.

For a bolder touch, you can add olives or a sprinkle of pepper.

Other variations, you can try adding bell peppers or peeled tomatoes.
