Ingredients
- 1.76 lbs boneless veal rack
- 1/4 cup extra virgin olive oil
- 1 tbsp butter
- 2 cloves garlic
- to taste rosemary and sage
- 1 cup dry white wine
- 1 cup milk
- to taste salt
- to taste black pepper

Preparation
Brown the meat, remove the garlic cloves and pour in a cup of wine and let it evaporate;
Then add the milk;
Close the pot and, once the whistle starts, lower the heat and cook for 40 minutes;
The sauce should be well diluted. For those who prefer it thick, let it reduce for a few minutes over high heat with the pot uncovered.
You can enrich the base with carrots and celery for a richer flavor.
Serve it with roasted potatoes, mashed potatoes, or sautéed vegetables.
