- 1 sheet puff pastry (or phyllo dough)
- 1 lb Butternut squash (peeled)
- 5 oz feta cheese
- 1 shallot
- to taste chopped walnuts
- 1 sprig rosemary
- 1 drizzle extra virgin olive oil
- to taste fine salt
- to taste pepper

- 1 Baking Pan graziano
Preparation
Allow to cool slightly, then add crumbled feta and walnuts;
Place parchment paper in a round baking pan with a diameter of 9.5-10 inches and lay out the puff pastry;
Pour the filling in the center, leaving a 1-inch border;
Fold the edges inward;
Brush the edge with milk and put in a static oven at 350°F for 30/35 minutes;
Serve warm with a side salad.
Substitute feta with mild gorgonzola for a stronger taste.
Add speck or bacon for a non-vegetarian version.
