Ingredients
- 25 oz cauliflower
- 1 1/4 cups cow milk (or plant-based)
- 3 1/2 oz grated Parmesan cheese
- 3 1/2 oz butter (or extra virgin olive oil)

Preparation
Wash under running water;
Bring a pot of water to a boil, salt it, and add the cauliflower;
Cook for 20 minutes;
Drain the cauliflower and leave it in a colander to lose excess water;
Blend the cauliflower in a mixer;
Add the milk, oil or butter, salt, pepper, and nutmeg. The cream should be smooth;
Add the grated Parmesan cheese and mix vigorously;
