What is more Christmassy and scenic than Gingerbread Cookies?
Bringing them to the table and enjoying them with others, using them as decorations on the Christmas tree or as place cards on the table, is truly wonderful.
The English call them Gingerbread, I think it’s a very cute name.

Ingredients
for Gingerbread Cookies
- 2 1/2 cups all-purpose flour
- 2/3 cup brown sugar
- 9 tbsp butter (cold)
- 1 egg yolk
- 1/4 cup honey
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 g nutmeg
- 1 tsp ground cinnamon
- 1 egg white
- 1 1/4 cup powdered sugar

Preparation
First, you need to prepare the dough, so combine flour, sugar, cinnamon, nutmeg, ginger, and baking soda in a large bowl;
Mix quickly and add the cold butter cut into pieces and press them with your fingers;
Add the egg yolk and honey and knead with your hands;
Sprinkle flour on a work surface and continue kneading;
When the dough is smooth and compact, wrap it in plastic wrap and let it rest in the fridge for 1 hour;
After the resting time, roll out the dough with a rolling pin, leaving it about 1/4 inch thick;
Use a cookie cutter to cut out gingerbread men shapes;
Place the shapes on a baking sheet lined with parchment paper and bake for 8/10 minutes at 350°F in a fan-assisted preheated oven;
Let the cookies cool down;
for the ROYAL ICING
In a bowl, mix the egg white with the powdered sugar a little at a time using the whisk;
Transfer it into a piping bag, make a 1mm hole, and decorate the cookies;
Let the cookies sit for about half an hour until the icing hardens;
The gingerbread cookies are ready!
Store in a cool place, preferably in a jar or tin box
