Mushrooms in Oil Easy and Quick Recipe

How to easily and quickly prepare mushrooms in oil.

If you’ve been here for a while, you know my tastes and that I love preserves.

Enclosing the flavors and aromas of the ingredients you love most in a jar and eating them whenever you like is a luxury I gladly afford.

The mushrooms used are champignons. Depending on their size, you can prepare them whole or slice them.

Mushrooms in Oil Easy and Quick Recipe

Ingredients

  • 2.2 lbs champignon mushrooms
  • 2 cups vinegar (white)
  • Half lemon juice
  • 3 leaves bay
  • to taste fine salt
  • to taste black pepper
  • to taste oregano
  • 1 clove garlic
  • to taste chili pepper
  • to taste extra virgin olive oil (or sunflower oil)
  • 4.2 cups water

Tools

  • 1 Slotted Spoon fackelmann
  • 1 Bowl pyrex

Preparation

  • Trim the end of the stem and rinse the mushrooms under running water;

    Dry the mushrooms with a cloth;

    In a high-sided pot, pour 4.2 cups of water, vinegar, bay leaves, lemon juice, and pepper. Bring to a boil;

    Separate the small mushrooms from the large ones. Large ones should be sliced;

    When the water boils, add the mushrooms and let them cook for 7/8 minutes;

    Drain the mushrooms and then dry them well with a tea towel;

    In a bowl, season the mushrooms with oregano, salt, pepper, thinly sliced garlic, chili pepper, and mix;

    In a sterilized jar, place the mushrooms and then fill with oil up to the rim;

    Seal the jar tightly and boil for 3 minutes to create a vacuum seal;

    This way, you can store the mushrooms for up to 3 months.

Once opened, keep the jar in the fridge for about ten days

    The mushrooms can be consumed after one month

  • Can I use another type of mushroom?

    You can use porcini mushrooms, honey mushrooms, mixed mushrooms. In this case, cooking times may vary
