Bean, Mushroom, and Potato Soup

If someone were to ask me what my favorite dish for the cold season is, I would definitely say Soup.

Soups are nutritious, rich in flavors and comforting.

The soup I propose today is the Bean, Mushroom, and Potato Soup.

In my YouTube video, I called it the Best Soup in the World. You can find it in this article.

The beans I use are borlotti and the mushrooms, preferably porcini, are champignons. I just had those!

Let’s take a peek at the recipe right away.

    Sauté garlic and oil with quartered cherry tomatoes separately;

    After 5 minutes, add the beans, 2 ladles of water, and the mushroom and potato sauce;

    Add the rosemary sprigs and cover.

    Cook slowly for 20 minutes;

    5 minutes before turning off, combine the mushrooms with the potatoes;

    Remove the garlic and aromatics;

    Salt everything;

    Sprinkle with chili pepper to taste;

If you have leftover soup, you can store it in a well-sealed container and eat it the next day.
