If someone were to ask me what my favorite dish for the cold season is, I would definitely say Soup.
Soups are nutritious, rich in flavors and comforting.
The soup I propose today is the Bean, Mushroom, and Potato Soup.

The beans I use are borlotti and the mushrooms, preferably porcini, are champignons. I just had those!

Ingredients
- 7 oz mushrooms (fresh)
- 1 cup canned borlotti beans
- 4 cherry tomatoes
- 2 potatoes (medium)
- 2 sprigs rosemary
- 1 leaf bay leaf
- 2 cloves garlic
- as needed extra virgin olive oil

Preparation
Clean the mushroom cap (champignon) with a damp cloth to remove dirt after cutting the stem;
Slice the mushroom;
If you chose canned beans, rinse the beans well under running water;
Peel and cut the potatoes into wedges;
In a large pan, pour a drizzle of oil with unpeeled garlic and cook for 1 minute;
Add the potatoes and a splash of water;
Cook slowly for 10 minutes;
Add the mushrooms and 1 bay leaf. Cook for 15 minutes;
Sauté garlic and oil with quartered cherry tomatoes separately;
After 5 minutes, add the beans, 2 ladles of water, and the mushroom and potato sauce;
Add the rosemary sprigs and cover.
Cook slowly for 20 minutes;
5 minutes before turning off, combine the mushrooms with the potatoes;
Remove the garlic and aromatics;
Salt everything;
Sprinkle with chili pepper to taste;
Serve hot with croutons;
