Ingredients

  • 3 bananas
  • 1 3/4 cups all-purpose flour
  • 2/3 cups plant-based milk
  • 1/3 cups sunflower oil (or low-fat yogurt)
  • 2/3 cups walnuts
  • 1 packet baking powder
  • 1 egg
  • 1 tsp ground cinnamon

Preparation

  • To prepare the Banana bread, first peel 3 bananas, slice them, and place them in a large bowl;

    Smash them with a fork and turn them into a puree;

    Add the sunflower oil or alternatively the low-fat yogurt and mix with a hand whisk;

    Add 1 egg and mix;

    Add the plant-based milk and continue to mix;

    Add the baking powder to the sifted flour and gradually add it to the banana mixture;

    Mix vigorously to avoid lumps;

    Add the ground cinnamon and mix again;

    Roughly chop the walnuts and add them to the batter. Mix again;

    Transfer the mixture into the loaf pan (9.8 x 3.3 inches) that has been oiled and floured, and decorate with some leftover walnuts;

    In a preheated static oven at 350°F for about 50 minutes;

    Check the baking with a toothpick test;

    Let it cool in the pan before slicing.

The leftover Banana bread can be stored outside the fridge for 3/4 days.
