Ingredients
- 21.16 oz Mantuan pumpkin
- 8.82 oz potatoes (boiled)
- 2 cups all-purpose flour (depends on the moisture of the pumpkin)
- to taste fine salt
- to taste nutmeg
- 1 pinch cinnamon
- 1 sheet of puff pastry
- 2 tablespoons all-purpose flour
- 2 eggs
- to taste chopped almonds
- 8.82 oz pumpkin (blended)
- 2.47 oz brown sugar
- 2.82 oz ricotta

- 1 Immersion blender
Preparation
Cut the pumpkin into pieces and stew it over low heat for 15 minutes with 1 tablespoon of water;
Mash the pumpkin with a fork, do the same with the boiled potatoes;
Combine the potatoes with the pumpkin, nutmeg, cinnamon, and salt;
Gradually incorporate the flour until the dough is compact;
Roll out the dough with a rolling pin;
Cut strips about 0.79 inches wide;
Roll up the strips and cut into small pieces;
Cook in salted boiling water;
When they float, toss them in the desired sauce.
Cut the pumpkin into cubes and bake at 356°F for about twenty minutes. It should be soft.
Blend the pumpkin and place it in a bowl with the sugar and mix.
Pour in the flour and, while continuously mixing with a beater, add the eggs.
It’s time for the ricotta, which should be mashed and combined with the other ingredients.
Finally, 2 tablespoons of chopped almonds.
Unroll the shortcrust pastry in a baking pan and prick the bottom.
Add the mixture and bake in a static oven at 338°F for 45 minutes
Sprinkle with the remaining chopped almonds and garnish with dollops of cream (if desired).
You can store leftover pumpkin gnocchi in the fridge covered with plastic wrap.
