New Potatoes with Rosemary

New potatoes with rosemary are absolutely the most delicious and inviting side dish there can be.

Preparing them is really easy.

New potatoes with rosemary are cooked whole and with their nutrient-rich skin.

New potatoes are classic potatoes that are simply harvested before the tubers are fully developed.

You don’t find new potatoes in all seasons, but in the springtime or when the temperatures range between 54°F and 68°F.

Ingredients

  • 2.2 lbs new potatoes
  • 1 garlic clove
  • 4 sprigs rosemary
  • to taste fine salt
  • to taste extra virgin olive oil
  • to taste black pepper

Preparation

  • To prepare the new potatoes with rosemary, first wash the potatoes and dry them well;

    Finely chop the garlic and remove the rosemary needles from the sprig;

    Pour the chopped garlic and rosemary over the potatoes. Salt and pepper to taste;

    Mix everything well;

    Place the potatoes in a baking dish or directly on the baking sheet with parchment paper;

    Add two fingers of water;

    In a static oven at 356°F for 40 minutes;

    The new potatoes with rosemary are ready.

Once cooked, the new potatoes with rosemary can be stored in the fridge well covered for at least 2 days.
