Mince the chicken meat (or, if you prefer, you can buy ready ground chicken), transfer it to a bowl, add the beaten egg, chopped Mediterranean herbs (I use a ready-made mix but you can choose the herbs you like best), finely chopped garlic clove, salt, and mix well, adding a bit of breadcrumbs if needed to achieve a soft but dry mixture that is easy to work with by hand. Form the meatballs and set aside. Peel the potatoes, wash them, and cut them into cubes. Place them on the oven tray lined with a reusable parchment paper mat and season with salt or oil. Bake at 392°F and cook for thirty minutes. Add the meatballs and continue cooking for another twenty minutes. Serve the meatballs with hot roasted potatoes.
