These yogurt and pine nut cookies were born out of a desire for something simple to keep in the pantry. The dough is made with yogurt, which makes them less dry than the usual shortbread, and I added pine nuts that give a particular flavor and a bit of different texture to each bite.
They are not elaborate cookies, on the contrary, their strength is precisely their simplicity. Crunchy on the outside and soft on the inside… they are quickly prepared and perfect to keep handy for breakfast or to accompany a coffee. They have that clean, old-time flavor that never gets boring. Come with me and we’ll start baking right away.
Happy baking, Giusi.

Ingredients for Yogurt and Pine Nut Cookies
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/2 cup yogurt (I like vanilla flavor)
- 1/2 cup vegetable oil
- 1 tsp baking powder
- 1/3 cup pine nuts
Steps for Yogurt and Pine Nut Cookies
In a bowl, start mixing the flour, sugar, and baking powder.
Then add the yogurt and oil, working everything until the ingredients are well combined. The dough will be very soft but workable.
Also add the pine nuts and incorporate them well.Take small pieces of dough, about 30-35 grams each, and form balls.
Lightly press them with the palm of your hands and place them on a baking sheet with parchment paper, leaving a bit of space between each one.For a more rustic touch, before baking, you can sprinkle the surface with a bit of granulated sugar.
Bake in a static oven at 350°F for about 25 minutes, placing the baking sheet in the center of the oven.
Once ready, let the cookies cool completely before enjoying them. I hope you liked this recipe, see you next time.

Storage
Once they are completely cooled, it’s ideal to place them in a regular glass container or in a tin box.
Keeping them well closed, the yogurt will help prevent them from becoming too dry, maintaining their pleasant consistency for 4-5 days. It’s a great way to have breakfast ready for almost the whole week.
