Ingredients
- 2 fennels
- 10 cherry tomatoes
- 5 fillets anchovies
- black olives (pitted)
- 1 tablespoon capers
- 1 tablespoon tomato paste
- 1 clove garlic
- oregano
- parsley
- extra virgin olive oil
- salt
Preparation of fennel alla marinara
Wash the fennels and cut them into wedges about a quarter of an inch thick.
Wash the cherry tomatoes and cut them in half.
Peel the garlic.In a large pan, heat a base of extra virgin olive oil and brown the garlic, then remove it, add the anchovy fillets and let them dissolve in the oil while stirring.
Add the capers and a handful of black olives, the cherry tomatoes, and the tomato paste and mix.Add the fennels and a small cup of water, mix, and cover with a lid.
Cook over medium heat for fifteen minutes, stirring occasionally and adding halfway through some oregano, a bit of chopped parsley and adjusting salt.
Turn off the heat and serve your fennel alla marinara hot.
