Recipe: Fried Stuffed Hard-Boiled Eggs
Let’s see how to prepare them together!
First, begin by hard-boiling the eggs. For perfect hard-boiled eggs, I recommend reading my tips.
Once cooked, let them cool, then peel them, slice them in half lengthwise, and remove the yolks.
Place the yolks in a bowl and mash them well with a fork, then add the spreadable cheese along with a few drops of milk and mix until you obtain a smooth mixture.
At this point, divide the mixture into three equal parts and place them in separate small bowls. In each, add the chopped parsley, black olive pâté, and chopped cooked ham, respectively, then mix to create the stuffing.
Now use these mixtures to stuff the eggs (you’ll get 4 half eggs for each mixture).
Then close the eggs by pairing them according to the stuffing, seal them with plastic wrap, and let them rest in the fridge for 15 minutes.
After the resting time, take the eggs out of the fridge, remove the plastic wrap, and start breading them: first, pass them in flour, then in beaten eggs, and finally in breadcrumbs.
For a more uniform and crunchy coating, repeat the process starting again with the beaten eggs.
Heat the oil and, once it reaches the right temperature, fry the breaded eggs, turning them often to achieve even browning.
To check if the oil is ready, dip a pinch of breadcrumbs: if it sizzles and forms bubbles, it’s at the right temperature.
Once the eggs are well-fried, remove them and place them on a plate lined with kitchen paper towels, lightly salt them.
See how beautiful and simple these stuffed fried eggs are to prepare? You can serve them whole or cut in half, depending on your taste.
If you choose to halve them, I recommend decorating them with pieces of cooked ham, parsley leaves, and black olives.
Storage and Tips
Storage: fried stuffed hard-boiled eggs can be stored in the fridge for up to 2 days.
Place them in an airtight container, preferably lined with absorbent paper to avoid excess moisture that could ruin the coating. To restore the coating’s crispiness, heat them in a static oven at 356°F (180°C) for 5 minutes, or in an air fryer for 3-5 minutes.
I do not recommend freezing them.
Tips: customize the fillings: besides parsley, olive pâté, and cooked ham, you can use tuna, capers, anchovies, or finely chopped vegetables.
Fried eggs are also perfect cold, making them ideal for picnic buffets.
FAQ
If I have leftover stuffing, how can I use it?
You can always spread it on slices of whole grain, seed, or five-grain bread, naturally toasted.

Can I prepare them in advance?
Of course, you can prepare the hard-boiled eggs and fill them in advance, store them in the fridge already breaded, and then fry them when ready to serve (within 1 day).
Can I bake them instead of frying them?
Certainly! Place them on a baking tray with parchment paper, brush them with a little oil, and bake at 392°F (200°C) for about 15-20 minutes, turning them halfway through. The coating will be less crunchy but lighter.
Are they suitable for children?
Yes, they are perfect for the little ones too! Just use fillings with a delicate taste, like cooked ham and cheese.
