Wash the oranges very well and dry them with kitchen paper, then cut off the top with a knife. Now proceed to empty the oranges using one of these two methods:
– with a melon baller, or if unavailable, with a teaspoon, remove all the inner pulp;
– if using fairly large oranges, you can empty them halfway with a citrus juicer and finish the last part with the melon baller. You must be very careful and proceed gently to avoid breaking the peel.
Filter and save the orange juice; two tablespoons are needed for this recipe, and you can use the rest as you like (great as a beverage).
Now prepare the filling: mix the ricotta well with the powdered sugar, add two tablespoons of orange juice, then add the chocolate chips and mix.
