Ingredients
- 4 eggs
- 7/8 cup granulated sugar
- 1 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1 vial red food coloring (5 ml)
- 1 1/4 cup raspberry jam (or red currants)
- 1 1/4 cup whipping cream
- 1/4 cup powdered sugar
- to taste powdered sugar
- 12 raspberries (optional)

To make the Valentine’s Roll I used a square baking pan of size 14×14 inches

Valentine’s Day Sweet Roll Recipe
Break the eggs, separating the whites from the yolks, and beat the whites until stiff peaks form with an electric whisk, then incorporate the sugar.
Add the sugar, yolks, sifted flour, baking powder, and a vial of red food coloring. Continue mixing until all ingredients are well combined.
Line a baking pan with parchment paper (I used a square one of 14×14 inches) and pour the prepared mixture, then level it on the surface with a spatula.
Bake in a preheated static oven at 392°F for about 10 minutes, the cake should become slightly colored and not dark (time and temperature greatly depend on your oven’s characteristics).
While the cake is baking, take a piece of parchment paper large enough to contain the entire extended sponge, wet it under running water, and wring it out well.
Place it on a table and, as soon as the cake is cooked, quickly invert it onto the wet paper, lifting it from the edges of the baking paper, ensuring that the upper part of the cake remains in contact with the wet paper.
Remove the baking paper gently, starting from one side, taking care not to break the cake base.Now, using the parchment paper, wrap the sponge from both sides, making it meet in the center of the cake. Then tie the roll with kitchen twine and leave it until the cake is completely cooled.
Use an electric whisk to whip the cream, then incorporate the powdered sugar (find all the tips here to know how to make perfect whipped cream).
Unroll the sponge cake (in the meantime, it will have taken some shape), trim the edges with a smooth blade knife, and spread the jam all over the surface first, followed by the whipped cream.
Roll the cake again as before (this time without the parchment paper together), being careful not to let the filling spill; make the sides meet in the center (as in the photo) and only now wrap the entire roll with parchment paper, tie tightly with string in three points, on the sides and in the center.This step will allow, once we slice the cake, the slices to come out heart-shaped.
Put the Valentine’s Roll in the fridge for at least 2 hours, then before serving, remove the parchment paper, dust with powdered sugar, and decorate with red raspberries, if desired.
It’s simple to prepare, but the result is truly astonishing: the sponge cake gently wraps, forming a heart-shaped slice, which at the first bite melts in your mouth with a combination of fresh and creamy flavors. Perfect to share with your loved ones!

Storage and Tips
Storage: the roll keeps in the refrigerator for up to 1 day, stored in an airtight container, or wrapped with clear food-grade plastic wrap.
Tips: when you cut the cake, once sliced and before serving, apply slight pressure with your hands on the side opposite the slice’s opening. This will enhance the heart shape of the cake.
