The Whole Grain Oatmeal Cookies with Raisins and Chocolate are delicious sweet bites that are easy to make. As often happens, I wanted to prepare something sweet as a snack but at the same time not feel too guilty, so I started by putting only 1 egg and Stevia sweetener in a bowl. Then I continued adding whole wheat flour, oatmeal flour and flakes, almond flour, milk, oil instead of butter, a bit of raisins and chocolate chips… well, I wanted something low in calories but ended up with energy cookies that are really delicious nonetheless. - 3.4 tbsp corn oil
- 3.5 oz whole wheat flour
- 3.5 oz almond flour
- 1.8 oz dark chocolate chips
- 1.8 oz oat flour
- 1.1 oz oat flakes (organic)
- 1.8 oz raisins
- 1 packet cream of tartar (leavening agent)
- 0.14 oz baking soda
- 0.035 oz fine salt

Steps
Crack the egg into the bowl, add the sweetener and whisk. Add room temperature milk and oil and blend. Incorporate the whole wheat flour with the cream of tartar, baking soda, almond flour, oat flour, oatmeal flakes, and salt. Begin mixing using the spatula.
Preheat the oven to static mode at 350°F
Add raisins, chocolate chips, and once the dough is well formed, take a spoonful slightly larger than a walnut. Place the cookies, spaced apart, on the baking sheet covered with parchment paper and bake. Bake for 18 – 20 minutes at middle height.
If you make more trays, keep them in the fridge until ready to bake.
