    Add the juice of half a lemon to the apples, a generous sprinkle of cinnamon, and a tablespoon of brown sugar, mix well and let rest for 10 minutes.

  • Unroll the puff pastry and use a 4-inch diameter pastry cutter to cut out 6 disks (you can re-roll the puff pastry, roll out a thin sheet, and form more disks); if you prefer, you can also make them smaller using a 2.5 or 3-inch diameter pastry cutter.

    Line a baking tray with the parchment paper provided with the puff pastry, place the disks, and use a knife to make lines on half of the circle.
