Ingredients
- 2 cups cups fresh whipping cream
- 4 eggs
- 4 tablespoons granulated sugar
- 3/4 cup cups powdered sugar
- 3/4 cup cups amaretti (drops)
- 1 ounce ounce chocolate sprinkles

To make this cold cake you need to use a springform pan about 9-10 inches in diameter.

Recipe
Separate the yolks from the whites and beat the yolks with 4 tablespoons of granulated sugar.
With an electric mixer, in a bowl whip the cream with the powdered sugar added at the beginning, then in another container, beat the egg whites until stiff peaks form.
Now add both the whipped cream and the beaten egg whites to the bowl with the beaten yolks, and gently fold them together from bottom to top until you get a fluffy mixture.
Take a springform pan about 9-10 inches and pour in the obtained cream, distribute half of the amaretti drops and stir to distribute them evenly in the mixture, then level the surface with a spatula.
Place in the freezer for at least 2 hours.Before serving, decorate the semifreddo with the other half of the amaretti drops and chocolate sprinkles, unmold it onto a serving plate, and enjoy it immediately.
Storage and Tips
Storage: The amaretti semifreddo can be stored in the freezer for up to a month.
I recommend taking it out of the freezer a few minutes before serving, it should be kept for at least 2 hours.
Tips: For a simple semifreddo, you can make it without amaretti.
You can replace the amaretti with almonds, pine nuts, or crumbled meringues.
You can also use large amaretti, in this case, crumble them coarsely.
