Ingredients

  • 3 eggs
  • 6 tablespoons sugar
  • 4 1/2 tablespoons all-purpose flour
  • 1 pinch fine salt
  • 1 egg
  • 1 tablespoon sugar
  • 1 cup soy milk
  • 1/2 tablespoon all-purpose flour
  • 1 lemon zest (grated)
  • 2 tablespoons lemon marmalade
  • vanilla powdered sugar

Steps

  • Separate the yolks from the whites.

  • Separately, beat the yolks with half of the sugar.

  • In a small bowl, beat the egg whites with the salt and the other half of the sugar.

  • Once ready, gently mix the two parts and add the flour until you get a homogeneous dough.

  • Bake the dough in the oven at 356°F for 8 minutes, using a round baking pan of 7 inches in diameter covered with a sheet of parchment paper.

  • Once taken out, the dough should be wrapped and folded in a clean napkin.

  • Prepare the lemon custard according to the instructions of the custard recipe, adding the grated zest of one lemon. Let it cool slightly before using.

  • Unroll the dough.
    Spread a layer of lemon marmalade and then a layer of cream, leaving a small space at the edges.

  • Roll it up again like a “spiral” and place it in the refrigerator.

  • It must rest for at least 2 hours for the rolls to firm up just right.
    Extract them, cut the ends, place each on a small tray and sprinkle with powdered sugar using a strainer.

  • Repeat the procedure for each snack.

Alternative Cooking

Since I went crazy, I wanted to try cooking them in a pan, on the large burner at minimum temperature for 7 minutes, using a sheet of parchment paper, wet with water and wrung out roughly. 😀

Suggestion

A cute idea for serving at a buffet is also slicing it into many micro rolls to eat in one bite.

  • Can they be filled with other flavors?

    Yes, of course, for example with orange marmalade, Nutella or whipped cream, or plum jam and chopped nuts.
