Clean and rinse the salmon trout well, then pat it dry with paper towels. Place it on a sheet of parchment paper. Insert lemon slices, garlic cloves, capers, olives, and rosemary inside.
Add a pinch of salt and a drizzle of extra virgin olive oil on the outside as well. Wrap the fish with parchment paper and then with aluminum foil to seal the aromas well. Place the salmon trout in the air fryer and cook at 356°F for about 20 minutes. Once ready, carefully open the foil and serve hot.
