The lemon and strawberry cupcakes are soft baked treats, ideal to serve at the end of meals or to enjoy at any time of the day. Delicate cupcakes made with simple ingredients. Ingredients
- 1 cup All-purpose flour
- 7 tbsp Sunflower seed oil
- 2/3 cup Sugar
- 2 Eggs
- Half Lemon
- 3/4 tsp Cream of tartar
- 3/4 tsp Baking soda
- 2.5 oz White chocolate
- 1/4 cup Heavy cream
- 2.5 oz White chocolate
- 10 Strawberries
- 8 Strawberries
Preparation
To make the lemon cupcakes, work the oil with the sugar until you get a frothy cream. Then add the grated zest and lemon juice. Add the eggs, one at a time, mixing well before adding the next.
Add the sifted flour with the baking powder and chopped chocolate. Mix with an upward motion until you get a mixture with a consistency similar to a cream.
Fill the molds 3/4 full and bake in a preheated oven at 350°F for about 20 minutes, do the toothpick test. Once baked, remove from the oven and let cool.
Wash the strawberries and blend them until you get a puree. Bring the cream to a boil, remove from heat and add the chopped chocolate. Stir to melt the chocolate and add the strawberry puree. Put in a bowl and let cool.
Remove the cupcakes from the molds and pour the ganache over each of them. Wash the strawberries and place one on each cupcake. Store in the fridge and serve when needed.
