PEAR AND MASCARPONE CAKE RECIPE
Pears are one of the few fruits my son eats, and even though he is almost a teenager, as a doting and slightly overbearing mom, if I find a new recipe, I like to try it for him and for myself, as I rarely refuse any dessert.
Today I found a very fluffy pear and mascarpone cake recipe in a cookbook, and here we are testing and tasting it with great enthusiasm… Shall we start cooking, want to join me?
The pear and mascarpone cake is delicious, keeps well for 2/3 days, and is even more delightful if served with a scoop of vanilla ice cream or a soft custard cream.

PEAR AND MASCARPONE CAKE

Ingredients for PEAR AND MASCARPONE CAKE
- 1 1/2 cups All-purpose flour
- 1/3 cup Potato starch
- 3/4 cup Sugar
- 3 Eggs
- 7 oz Mascarpone
- 2 Pears
- 1/4 cup Butter
- 1 3/4 packet Baking powder
- to taste Powdered sugar (optional)
Tools for PEAR AND MASCARPONE CAKE
- Stand Mixer
- Bowl
- Cake Pan
- Spatula
- Knife
Preparation
In a bowl, place the soft butter with the mascarpone and sugar.
Beat the ingredients with electric beaters until a frothy and homogeneous mixture is obtained.
Now add the eggs, adding the next one only after the previous one has been absorbed, still using the beaters.
Sift the flour with the potato starch and the baking powder.
With a spatula and with movements from bottom to top, add the dry ingredients to the cream in several additions.
Butter and flour the cake pan (or line it with parchment paper) and pour in the pear and mascarpone cake mixture.
Level the surface well and arrange the peeled and cored pear slices in a radial pattern on top.
Place the pan in a preheated oven at 340°F for about 45/50 minutes, or according to your oven’s characteristics.
Once baked, use the toothpick test to check doneness, and then remove and unmold the pear and mascarpone cake.
Once warm, dust with powdered sugar if desired, and serve…
